Some people cheat and use cream cheese in the custard but I don't like this. In some locales you can buy it ready made in a grocery; in Puerto Rico it's ubiquitous, served in a cup with a wooden spoon like ice cream is here. There are also variations like chocolate or Kahlua flan, but vanilla (using Mexican vanilla, which is different from other vanillas) is my favourite. My all-time favourite Mexican food restaurant closed a few years back after failing their health inspection. The local news station decided to start airing a feature on restaurants who'd failed their inspections, complete with gory details. This made an obvious impact on business. I'll never have food that good again :-( :-( I'd eaten there at least a hundred times and never gotten sick. The truth about health inspections is that huge national chains who have standardised everything down to the last detail will always get the highest scores and the mom and pop shops will get lower scores.
