Yes, the JMDL cookbook should be in higher circulation. Putting it up on the web site is a great idea. Les will have some suggestions I'm sure. He's a talented fellow. As for kangaroo, I was too timid for many years too. The thing is, cattle/beef is such a huge industry here but they are imported animals and they are ruining the top soil of this fragile land. Ideally, I would like to see kangaroos replace cattle and get people more used to eating them. They can be farmed just as well as cattle and they would be in their natural environment. The meat is much more healthy than beef. It is very low in fat and has a high protein count. It can be difficult to cook though. It's fine for those who like their meat rare but I don't like to see blood in the meat I'm eating. If you cook kangaroo well done, it becomes tough. It's like, rare or burned. I have only had it once in a restaurant and had to beg them to over cook it. It wasn't too bad. The taste is actually nicer than beef but quite similar. You can buy it in supermarkets now but it's quite expensive because there are no farms yet. Of course now I'm very curious about where you work. I guess it must be a restaurant. My advice: take the leap. It's not so scary once you try it. It really is a lot like beef. I'll work it in somehow to a 2nd edition Joni cookbook.
