The stuff he plays is power chords. Power chords are basically played with the root and the fifth (no third). Many of them can be played with only two fingers down, but you don't play all the strings. That may be the answer to Em's dilemma. If you do a google search on "power chords" you may find a solution that lets you play horrible chords like C# and B without having to barre them. It also occurred to me that you might be able to tune your guitar to an open D and use straight barres for most of these chords up and down the neck(with the exception of the minor - I think there was just one, and you could probably play that with just a couple of fingers down - but then you'd probably be playing it like Joni, and I think you wanted to play McGuinn's version, which I've never heard & that most likely sounds a fair bit different from Joan's.)
