The idea of an extremely low-carb diet is not only unpractical and extremely wasteful in a world with rapidly waning natural resources, but it is phenomenally unhealthy and encourages ketosis, a process which mimics starvation. Weight might drop off, but the side effects (permanently ruined metabolism, among other things) are severe. Carbohydrates are hardly the primary culprit when it comes to American's unhealthy diets -- processed/refined carbohydrates -- and other foods -- are. I know very few people whose diets consist primarily of whole foods who are experiencing health problems, and none of them carefully monitor their carbo/fat/protein ratio. The bottom line: if you're eating a balanced diet featuring lots of whole grains (quinoa, millet, and amaranth are all great alternatives to the far more pedestrian wheat, barley, and brown rice), legumes (lentils, peas, beans), and plenty of fresh produce (along with natural "good" fats), you're more likely to enjoy good health than if you are buying some fancy "no carb pancake mix" made from soy flour for 5.99 a box at your local GNC and cooking up some bacon and eggs on the side. Good health is achieved by food with a higher nutrient ratio and a lower caloric density. That's not saying that we should never have some fun with food or allow some indulgences, but that living almost exclusively out of boxes, packages, and Fast Food joints is what's sending us to an early grave. Hit up those bulk bins -- and the farmer's market!
