Either they're using the sensors in their brains that activate when objects are in motion--if your prey won't budge, move your head, it's all relative--or they're just using parallax to determine where the prey is by how much it moves compared to the background. (Seems to me a really clever predator could accomplish this just by alternately closing one eye, then the other. Apparently nocturnal flying squirrels do this, not when hunting (except for the nocturnal flying squirrels OF DOOM! mwuhahah!) but so they can judge distances better when jumping between trees in the dark. Nocturnal animals' huge eyes have very shallow depth-of-field (you would too if you were at f/1.0).
