They use the small diameter pepperoni, and the edges of the pepperoni curl up and get slighlty crusty in the oven and the pepperoni oil is trapped in the bottom of the pepperoni. Lou's was mentioned. Other midwestern cities and the food they are know for: Cincinnati = Chili. Greek style with cinnamon in the sauce and spaghetti noodles, beans, cheese and onions as options. Detroit = Coney Island hot dogs. Ours are with chili, onions and mustard. No pickle slices, ketchup, relish or any other additions allowed aside from loose burger. We also have a lot of Greek immigrants and have Greektown chocked full of Greek restaurants not far from downtown. A lot Greek restaurants are in the suburbs as well with great coneys.
