Sarah McLachlan did an okay version of it, too. And not the Beatles' song, but I absolutely love Blackbird by Epiphany Project (which I would also describe as slow and haunting). Kris Delmhorst's Hummingbird might also be suitable (I think at least the guitar in that is pretty light). Then there's "Redbird" (which wikipedia tells me is an actual bird) by Redbird (that same Kris Delmhorst together with Jeffrey Foucault and Peter Mulvey) - a cover of a song by an "L. Baltimore" I've never heard of?
