As I learned it, umlaut o is prounounced by rounding your lips (as if to whistle) while saying the "oh" sound. English speakers not used to hearing the difference, however, will tend to hear it as "oh". If Mimi's last name is derived from German, it's diverged a bit from the likely original pronunciation.
