The key to fixing this is to go to the Tools menu, look for Autoformat. Under there are two tabs, one for Autocorrect as you type and the other just plain Autocorrect. (Acutally, I may have the two words reversed). In any event, uncheck the boxes for "smart" quotes and you will get standard ones that don't fall apart in email. While you are there, you can also uncheck the options that convert text into symbols and formatting: _italic_ to real italic, *bold* to real bold, and Internet Hyperlinks. The last one is a real nuisance - you can't type an email address without making it clickable, which makes it hard to edit when you make a spelling error. Strangely enough, I just today taught a class that involved showing people how to turn off those options. They are buried in Word, Excel, Entourage, and probably Outlook as well. I always wanted to know how to turn off those damn hyperlinks! I learned how to get rid of them, but not how to keep them from happening at all. And it was great to get rid of the Autocomplete that tried to insert "Office 2004 Test Driver" into my documents all the time.
