To be honest, I rather think Amarice was one of those characters that people take an immediate liking or dislike to. And our arguments in her favour or against are probably coloured by that. And she wasn't on the series long enough for opinions to change much. I loved her disrespect of persons - "Xena? I thought you'd be - taller" I howled with laughter at that. As you say, she made snap judgements, but her opinions could change with experience - she rapidly came to accept Xena's leadership (which of course was a development I liked). On the other hand, her opinion of Gabrielle's pacifist streak coincided entirely with mine - as did her opinion of Eli.
