Well, from our own Xena show, some of the (male) stunties had the occasional one-liner which was enough to get them acting credits. I don't know of any female stunties who did, but I wouldn't be surprised. Spreading a bit wider to body doubles (as opposed to stunt doubles), there is of course Polly Baigent, a regular body double for Lucy I believe, who got to play Paulina the wannabe Xena actress in The Play's the Thing (what a cool in-joke!) and Polly the Xenafan in Clones. I wonder if she had to audition for it? Actually, I'm just guessing, but I imagine she may have had plenty of acting experience at delivering Xena's lines, with her back to the camera so that other actors could respond to 'Xena' (I forget the term for that). Returning to stunties in acting roles, I was intrigued to see in 'Kill Bill' (which of course had Zoe Bell as Uma Thurman's stunt double) that the woman who co-starred with Zoe in Double Dare - Wonder Woman's double - whose name I have shamefully forgotten - had a small acting part.
